Thick & Fluffy Blueberry Pancakes

These blueberry pancakes are thick and fluffy and are the perfect addition to your breakfast!

Thick and Fluffy Blueberry Pancakes

Breakfast is and has always been my favorite meal of the day. Pancakes in particular are a favorite of mine so I set out to create a thick and fluffy on the inside but crispy on the outside pancake and I think I’ve done just that! These blueberry pancakes are perfect for any time of day, not just breakfast. Keep reading to find out how to make them yourself!

Ingredients:

  • All-purpose flour
  • Baking powder
  • Salt
  • Sugar
  • Milk
  • Vanilla extract
  • Melted butter
  • Egg
  • Blueberries – the amount needed varies due to personal preference. In this recipe you’ll be adding blueberries to each individual pancake so the amount added to each is up to you
  • Syrup

How to Make Thick & Fluffy Blueberry Pancakes:

Start by melting your butter and sit it aside to cool down while combining other ingredients.

In a large bowl combine your dry ingredients – flour, baking powder, salt, and sugar – and whisk all together.

In a separate smaller bowl combine your wet ingredients – milk, egg, and vanilla extract. Whisk fully.

Slowly add your wet mixture to the dry mixture and mix until combined. Lastly, add the melted butter and whisk until incorporated. The mixture will be thick and foamy.

Heat your pan or griddle to medium heat. Add a pat of butter to coat the bottom of the pan. Once the pan has heated through (the butter will bubble slightly) pour your pancake batter onto the pan. I like to make large pancakes but the size is completely up to you!

Immediately upon pouring the batter onto the pan, add your blueberries into the pancake and press each one into the pancake. The amount you add to each pancake is a personal preference but (in my humble opinion) the more the merrier!

Once the top of the pancake bubbles, flip your pancake and cook the other side for an additional minute or two or until golden brown.

Top with syrup and enjoy!

*Note – Feel free to omit the blueberries if you’d like just regular pancakes!

Ingredients
  

  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 1/2 tbsp sugar
  • 1 1/2 cup milk
  • 3 tsp vanilla extract
  • 4 tbsp melted butter
  • 1 egg
  • Blueberries The amount added to each pancake is up to you!

Instructions
 

  • Melt butter and set aside to cool while combining the other ingredients.
  • In a large bowl, whisk together the dry ingredients – flour, baking powder, salt, and sugar.
  • In a smaller bowl, combine the milk, vanilla extract, and egg and whisk until fully incorporated.
  • Slowly, add the wet mixture to the dry and whisk until combined.
  • Stir in the melted butter. The batter will be thick and foamy.
  • Heat your pan or griddle to medium heat and add a pat of butter.
  • Once the butter starts to lightly bubble add your pancake batter (this recipe makes approximately 8 large pancakes or 16 smaller ones.) Immediately upon pouring the batter onto the pan, add your blueberries to each individual pancake and lightly press them into the batter. The amount added is personal preference.
  • Once the batter bubbles, flip your pancake and cook for an additional minute or two or until golden.
  • Top with syrup and enjoy!

Notes

Feel free to omit the blueberries if you would just like regular pancakes
