Servings 4 people

Ingredients

  • 3 large potatoes I use Russet, but you can use your favorite kind or whatever you have on hand
  • 1/4 tsp salt
  • 3/4 tsp pepper
  • 1 tsp garlic powder
  • 2 tbsp melted butter
  • 1 1/2 tbsp grated parmesan
  • parsley flakes Optional

Instructions

  • Wash and scrub your potatoes to remove any excess dirt (do not peel.) Pat potatoes dry to get rid of excess moisture.
  • Cut potatoes into 1-inch cubes. Try to cut the potatoes as close to the same size as possible.
  • Place potatoes in a bowl and drizzle with olive oil, salt, pepper, and garlic powder. Toss to coat each piece thoroughly.
  • Place potatoes in air fryer basket in a single layer, taking care not to overlap the potatoes.
  • Air fry at 400º for 10 minutes.
  • When the 10 minutes are up, shake the basket to change placement of potatoes to ensure an even cook. Use tongs to place back in a single layer if needed (potatoes will be hot.)
  • Continue to air fry for another 5-10 minutes or until golden and crispy. Check the potatoes at the 5 minute mark and remove if done or continue cooking if necessary.
  • Melt butter in a microwave safe dish.
  • Remove potatoes and transfer to a serving dish. Pour or brush melted butter over potatoes and sprinkle grated Parmesan and parsley flakes (optional.)
  • Enjoy!

Notes

These potatoes can be made on the stove as well if you do not have an air fryer. Follow the same instructions for the ingredients and cook in a pan over medium heat until golden and crispy.
